INGREDIENTS
Fresh Corn Cobs: 4 large (not too tender)
Onions: 4 medium ones
Green chilies: 2 or 3
Coriander leaves: 1 bunch
Salt to taste
Refined oil for deep-frying
Method
Remove the corn seeds from the cobs. Grind the corn to a coarse consistency in a mixer jar along with salt (Do not add water while grinding. Grind in batches to prevent the batter becoming too smooth).
Transfer the corn batter into a suitable container. Cut onions, green chilies and coriander into fine pieces and mix into the corn batter. Heat oil in a deep frying pan. Lower the flame to medium heat and drop blobs of the corn batter into the hot oil (approximately 1” in diameter). It is important not to pat or shape the blobs. About 8 to 10 may be fried at a time. Fry until golden yellow in colour. Serve hot with sweet and sour tomato sauce.
